Lemon raisin scones

I LOVE scones. This is my grandmothers recipie.

2 eggs
1/2 cup margarine
3/4 cup sugar
3-4 cup flour
3 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp lemon extract
1 cup buttermilk
1 cup raisins

Combine buttermilk and baking soda, then set aside

Cream butter and sugar together, then set aside.

Combine dry ingredients and then alternately add dry ingredients and buttermilk to the butter and sugar mixture. Stir until moist. Do not over stir or they will be tough.

Put in the refrigerator for 20 minutes. Then roll out to about 1/4 t0 1/2" on a floured surface And then cut into desired shapes. (I prefer circles that are about 3" diameter)

Bake in a 400 oven for 10-12 minutes. Do not cook until they begin to brown.
