White sauce and cheese sauce

1 diced onion
3 TB unsalted butter
2 TB ap flour
1 chicken boullion cube
3/4 boiling water
1/4 cup shredded sharp cheese
1/4 tsp tarragon
1/4 cup cream

Dissolve boullion in hot water and set aside. Saute onions in butter until they become clear. Blend in flour. Add boullion, tarragon, cand cheese. Stir constantly until mixture thickens and bubbles. Remove from heat ans stir in cream. Salt and pepper to taste

Cheese sauce
2 TB butter
1 cup milk
2 1/2 TB flour
3 slices American cheese
Salt and pepper to taste

Melt butter in saucepan and blend in flour. Add milk and other ingredients. Cook over medium heat until smooth and thick.
