Why not start with dessert?

I am a chocolate and cheesecake addict. So I think it is only fitting that I share my 2 favorite desserts with you first.

The first one is Frozen Peppermint cheesecake. A friend posted this on the website where I like to hang out. I tried it at christmas time and was hooked!!

1 1/4 cups choc wafer cookie crumbs (about 24 wafers)
1/4 cup sugar
¼ cup margarine or butter, melted
1 (8oz) package cream cheese, softened
1(14oz) can Eagle Brand Sweetened Condensed Milk (Not evaporated milk)
1 cup crushed hard peppermint candy
Red food coloring, optional
2 cups (1 pint) whipping cream, whipped

Combine crumbs, sugar and margarine, press on bottom and halfway up side of 9 inch springform pan. In large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk. Stir in crushed candy and food coloring if desired. Fold in whipped cream. Pour into prepared pan; cover. Freeze 6 hours or until firm. Garnish as desired. Return leftovers to freezer

When I make this recipie, though, I am usually making it for me. lol. So I have started taking dixie cups and putting a spoonful or 2 of the crumbs in the bottom, then filling it with the creamcheese mixture, then freezing it. I end up with small portions that I can grab from the freezer as a treat any time I want.

Double chocolate brownies - my favorite recipie ever. I got it off a package of Nestle morsels years and years ago, but adapted it to my tastes.

2 cups of chocolate morsels
1 stick of butter or margarine
Melt in a large sauce pan on the stove. When melted. turn off stove and remove from heat.

Add in
1 cup sugar
1/4 tsp baking soda
1 1/4 cup flour
3 eggs
1 tsp vanilla
Mix by hand to the count of 30. It is okay if it is still slightly lumpy. Pour into a well greased pan and bake at 350 for 18 - 22 minutes.

When you remove it from the oven drizzle some carmel syrup over the top and then sprinkle on some extra chocolate chips and pecan pieces.

Dining delights

I came across a stack of recipies I have and don't wanna lose. I have posted a lot of "favorite" recipies online to share with friends, but when the site I posted them at got changed, a lot of them got lost. I figure if I post them here, I won't lose them as easily.

I will try and remember to label them according to the type of dish, but please excuse me if I happen to forget.
