Fast Fettuccini Alfredo

8 oz cream cheese
3/4 cup parmesan Cheese
1/2 cup butter or margarine
1/2 cup milk
8 oz cooked fettuccini.

In a saucepan stir cream cheese, parmesan, butter and milk over low heat until smooth. Add Fettuccini and toss lightly.

Mashed potatoe soup

I got this recipie from one of the shows on Food network. My daughter and I LOVE IT. My hubby loves it if I leave the potatoes a little bit chunky

2 teaspoons olive oil
1 cup diced onion
1 cup diced celery
6 cups reduced-sodium chicken or vegetable broth
2 cups mashed potatoes
8 ounces shredded Cheddar
1/2 teaspoon salt
1/4 teaspoon ground white pepper
1 teaspoon dry mustard
1/2 package of bacon crumbled

Add oil to a large pot set over medium-high heat. Add minced onion and minced celery and saute for 2 to 3 minutes, or until they start to soften. Add stock and mashed potatoes and bring to a simmer. Add Cheddar, salt, white pepper, and dry mustard. Stir to combine and allow the cheese to melt. Garnis with sour cream shredded cheddar and bacon.

Chicken noodle soup

6 cups of chicken broth
12 oz of diced chicken
1 large onion minced
1 tsp poultry seasoning
1/2 tsp savory
1/4 tsp black pepper
3/4 c tiny shell pasta
3 cups broccoli, califlower and carrots

Cheese tortellini soup

3 cups of beef broth
1 cup of cheese tortellini
1 cup of frozen peas
2 TB sundried tomaotes
2/4 tsp basil
1/4 tsp oregano

Taco Soup

1 lb hamburger
I small onion minced
1 package taco seasoning
1 can tomatoe soup
1 can of tomatoe with chilies
1 can of chili
1 can of kidney beans
1 can of corn
1 cup of water

Sautee onion and brown hamburger. Add remaining ingredients and simmer for 20 minutes or heat in a crockpot. Searve with sour cream and mild cheddar cheese

Cheese soup

My mom gave me this recipie the year I got married and it has been a favorite ever since the first bowl full.

1 1/2 quarts of water
1 cup minced onion
1 cup minced celert
4 chicken b oullion cubes
Boil for 3o minutes, then reduce heat.
1 package mixed vegetables
2 cups diced potatoes
Cook for 30 minutes. Remove from heat
1 family size can of Cream of Chicken soup
I lb of Velveta or similar type american cheese.

If you like Olive gardens sausage and potatoe soup

Then try this recipie. My sister gave me this recipie and my family devoures it every time I make it.

My hubby and I always get the soup, salad and bread sticks meal. This is a great recipie for doing it at home.

1 tsp olive oil
2 garlic cloves
1/2 small onion
1 lb of Jimmy Dean Sausage
6 cups chicken stock
3 cups of water with 3 bullion cubes and 3 cups of chicken stock
4-6 potatoes
1 cup heavy cream
1 cup kale

Mince onion and garlic cloves and brown with oil in a large stew pot. Add jummy dean sausage and chop up as it cooks. Drain fat when fully cooked. Add in chicken stock or water and bullion cubes. Bring to a boil.

Slice potatoes 1/4" thick. Add to boiling water and cook until tender.
Remove from heat and add heavy cream. Serve with kale as a garnish on top.

Peanut Butter loaf

1/2 cup peanut butter
1/2 cup white sugar
1/2 cup water
1 egg 1 tsp vanilla
1 3/4 cup baking mix

Mix together peanut butter and sugar until smooth. Add water, egg and vanilla. Mix well.

Stir in baking mix. Mix well. Pour into a lightly greased 9x5x3 pan.

Bake at 350 for 25 to 30 minutes. Cool in pan for 10 minutes before turning out of pan.

Oatmeal Banana Bread

2 cups Baking Mix
1 1/4 cup rolled oats
2 medium bananas
1/4 cup water
1/4 cup butter or margarine
1/2 cup white sugar
2 eggs

Mix baking mix and oats, then set aside

Mash bananas and add water, oats and baking mix

Beat butter and sugar togethert then beat in eggs 1 at a time, Combine with dry ingredients and banana mixture. Mix until just blended but be careful to not overmix.

Bake in a lightly greased 9x5x3 pan at 350 for 50- 60 minutes

Cool for 10 min in pan before turning out of the pan

Baking mix

There are 2 recipies that I use that call for this baking mix.

4 cups all purpose flour
1 1/2 cups skim milk powder
3 TB baking powder
2 TB sugar
1 1/2 tsp salt
3/4 cup vegetable oil

Combine all dry ingredients and mix well.

Add oil and stir until the mixutre looks crumbly. Put into a container with a tight fitting lid.

Lemon raisin scones

I LOVE scones. This is my grandmothers recipie.

2 eggs
1/2 cup margarine
3/4 cup sugar
3-4 cup flour
3 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp lemon extract
1 cup buttermilk
1 cup raisins

Combine buttermilk and baking soda, then set aside

Cream butter and sugar together, then set aside.

Combine dry ingredients and then alternately add dry ingredients and buttermilk to the butter and sugar mixture. Stir until moist. Do not over stir or they will be tough.

Put in the refrigerator for 20 minutes. Then roll out to about 1/4 t0 1/2" on a floured surface And then cut into desired shapes. (I prefer circles that are about 3" diameter)

Bake in a 400 oven for 10-12 minutes. Do not cook until they begin to brown.

Rice pudding

Another dessert recipie that doubles as breakfast in my household.

I actually have 2 recipies that I like. Which one I make depends on what time I have.

2 cups of cooked rice
1 1/2 cups water
1 cup skim milk powder
1/4 cup sugar
1/4 cup raisins
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 1/2 tsp vanilla

Combine rice, water skim milk powder, sugar raisings cinnamon and salt in a medium sauce pan and mix well.

Turn the stove on to low heat and cook until pudding is creamy.( about 20 minutes)
Stir in vanilla and serve warm.

The second recipie is much sweeter so makes a better dessert

4 cups of cooked rice
1 stick of butter or margarine
1 can of sweetend and condensed milk (not evaporated milk)

Combine ingredients in a medium saucepan and cook over low heat until the mixture becomes creamy.

The original recipie called for just 2 cups of rice, but it was tooooooo sweet for me. I like this much better.

Apple Oatmeal Crisp

Makes a great dessert and it makes a great hot breakfast if you cut the sugar back a little bit.

1 1/2 lbs apples
3 TB white sugar
1/4 tsp cinnamon
1 1/3 rolled oats
3/4 cup brown sugar
1/4 tsp baking powder
1/4 tsp baking soda
1 cup milk
1/3 cup flour
1/2 cup butter or margarine divided

Peel and cut apples into thin slices. Add cinnamon and 3 TB sugar and toss lightly. Set aside.

Combine oats, brown sugar, baking powder and baking soda in a large bowl. Divide the mixture in half. Add the milk to 1/2 of the mixture and add the flour to the other 1/2.

Use a pastry cutter or knives to cut 1/4 cup of the margarnie into each mixture. Cut together until the mixture looks like fine crumbs.

Turn the oven on to 350. Lightly grease a 13x9x2 pan. Press the skim milk mixture into the bottom of the pan, then cover with the mixture of apples then top with the crumbled flour mixture on top.

Bake for 20 to 25 minutes or until golden brown.
