Chocolate chip cookies

3/4 cup shortening
1/14 cup brown sugar
2 TB milk
1 TB vanilla
1 egg
1 3/4 cp flour
1 tsp salt
1 c chocolate chips
1 cup chopped pecans

Heat oven to 375
Combine shortening, brown sugar, mlk and vanilla. Add egg to the mixture
Combine flour salt and baking soda and mix to creamed mixture until just blended. Add chocolate chips and pecan pieces.
Drop on baking sheet and bake for 8 - 10 minutes.

Chewy Brownie cookies

2/3 cup shortening
1 1/2 cups brown sugar
1 TB water
1 tsp vanilla
2 eggs
1 1/2 cups flour
1/3 cup baking cocoa
1/4 tsp baking soda
1/2 tsp salt
2 cups chocolate chips

Heat oven to 375

Combine shortening, brown sugar water and vanilla in a bowl. Add eggs.
Combine flour, cocoa, baking soda and salt. Mix into creamed mixture at a low speed until just blended. Stir in chocolate chips.

drop by rounded tablespoonfuls onto baking sheet and bake for 7-9 minutes.

Peanut butter cookies

3/4 cup Peanut butter
1/2 cup shortening
1 1/4 cups brown sugar
3 TB milk
1 TB vanilla
1 egg
1 3/4 cups flour
3/4 tsp salt
3/4 tsp baking soda

Heat oven to 375
Combine pb, shortening, brown sugar, milk and vanilla. Baeat until well blended. Then add the egg and beat until just blended.
Combine flour salt and baking soda. Add to the creamed mixture at low speed. Mix until just blended. Drop heaping teaspoons onto baking sheet. Flatten slightly with tines of a fork

Bake for 7-8 minutes


Cranberry Walnut cheesecake (recipie from Keebler ready crust)

1 graham cracker crust

1 1/4 cups cold milk
2 small packages of cheesecake flavor instant pie filling
1/2 tsp grated lemon peel
8 oz whipped cream
16 oz whole cranberry sauce divided
1/2 cup toasted walnuts

Mix milk and pudding mixesfor 1 minute. add lemon peel. Gently add in 1/2 of the whipped topping.

Wpread 1/2 mixture over the bottom of the crust. Spread 1/2 the cranberry sauce over pudding mixture. Sprinkle with 1/2 of the walnuts. top with remaining pudding and repeat. Garnish with remaining whipped cream.

Rasberry Swirl cheesecake (from keebler ready crust)
1 ready crust
8 oz softened cream cheese
1 can sweetened condensed milk
1 egg
3 TB and 1 tsp lemon juice
1/2 cup rasberry preserves.

Beat cream cheese until fluffy. Add sweetened condensed milk until smooth. Add egg and 3 TB of lemon juice.

Pour half of the bater into the crust. Combine 1 tsp of lemon juice with rasberry preserves and pour half over the batter.

Pour remaining cream cheese batter over the top. Swirl the rest of the preserves over the top.

Bake at 300 for 55 minutes.

Strawberry bottom cheesecake (keebler Ready crust recipie)
1 ready crust
4 oz softened cream cheese
1/4 cup sugar
1/2 cup sour cream
1 tsp vanilla
4 oz frozen whipped topping
1 pint fresh strawberries thinly sliced
1 cup strawberry glaze

Beat cream cheese until smooth. Gradually add in sugar. Add sour cream and vanilla. then fold in whipped topping.

Pread a thin layer of glaze over the bottom of the crust. Add strawberry slices and top with the remaining glaze. Spoon cream cheese over glazed berries.

Easy Chocolate chip cheesecake (keebler ready crust recipie)
1 ready crust

6 oz cream cheese
14 oz sweetened and condensed milk
1 egg
1 tsp vanilla
1 cup mini chocolate chips
1 tsp flour

1/2 cup mini milk chocolate chips
1/4 cup whipping cream

Preheat oven to 350
Beat cheese until fluffy, then gradually add sweetend and condensed milk. Add egg and vanilla. Toss thips in flour and then stir in. Pour into the crust. Bake for 35 minutes. Cool

Melt chocolate chips with whipping cream over low heat and stir until thick and smooth. Spread over cooled pie and return to the frige.

Sugar cookies

1/2 cup butter
1 cup sugar
1 egg
1 tsp baking pwoder
1 3/4 cup flour
1 tb milk
1/2 tsp vanilla
1/4 cup salt

preheat oven to 375
Cream butter and sugar. Add egg and mix. Add remaining ingredients and mix until smooth. Refrigerate for 2 hours. Roll out to 1/8" thick. Bake for 12 -15 minutes.

Avacado fruit salad

1/4 cup olive oil
2 TB rasberry vinegar
2 TB chopped nuts
1 tsp grated lime
1TB fresh lime juice
2 TB chopped basil leaves
1/2 tsp dry mustard
1/4 tsp salt and pepper

Whisk together and set aside

10 oz mixed baby greens
3 kiwi, peeled and sliced into half rounds
2 grapefruit peeled and segmented
2 cups strawberries
1 ripe avacado (1/2 sliced into wedges and 1/2 cubed

In a large bowl combine all ingredients except slices. Pour on dressing and toss to coat. top with avacado slices.

Crockpot Spagetti

1 lb meatballs
26 oz spagetti sauce
1 onion
1 1/2 cup water
8 oz pasta

Combine meatballs, sauce, onion and water in a crockpot and cook on high for 2 hours. Add pasta and cook for an additional 2 hours before serving.

(Note: Don't try to cheat this one and add everything at once, thinking you will cut your cooking time by 2 hours. You will end up with nasty raw soggy noodles instead!! BLEGH!)

Beer Bread

We love beer bread, but hate the price for the mix from Tastefully simple. I found this recipie so I can make it a lot cheaper.

2 1/2 cups self rising flour
1/2 cup all purpose flour
1/4 cup brown sugar
1/2 tsp salt
1/2 tsp onion powder
3/4 tsp italian seasoning
1 can of beer (or soda if you prefer)
1/4 cup melted butter

Bake at 375 for 45-55 minutes

Christmas nut horns

I know the title says Christmas, but I like these all year round and they are simple and more healthy than a lot of other cookies I could be making for myself!!

This is an old family recipie so there is no real exact recipie for making the filling. I like to mix a little at a time so I don't make too much.

8 oz margarine
8 oz cream cheese
3 1/3 cup flour
1/2 cup chopped pecans
honey to taste
evaporated milk just to moisten.

Refrigerate Dough for 1 hour. Then roll out dough to 1/4" thick using powdered sugar instead of flour. Cut to form 2" squares(about the size of a post it note). Spoon filling mixture diagonally between 2 corners and fold the opposite 2 corners to the middle and "glue" together with a little bit of water.

Bake at 400 for about 12 minutes or until just starting to brown.

Hashbrown casserole

2 lb hashbrowns
1/2 cup melted butter
1 can cream of chicken soup
8 oz sour cream
1/2 cup chopped onion
2 cup shredded cheese
1 tsp salt
1/4 tsp black pepper
2 cups cornflakes

Combine all ingredients except cornflakes and put into a 9x13 baking dish. Top with cornflakes and bake at 350 for 1 to 1 1/2 hours

Pumpkin Gingerbread Pie

1 cup canned pumpkin
1/3 cup brown sugar
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp cloves
1 egg, beaten
1/2 cup half and half or light cream
1 14.5 oz package gingerbread mix

Combine pumpkin, sugar, sice and eggs. Beat until just combined. Sir in half and half and mix well.

Prepare gingerbread according to package. Pour into a pie plate sprayed with oil. Proon pumpkin over the batter and gently swirl using a knife.

Bake at 350 for 50 minutes.

Bakes squash or pumpkin

1 small pumpkin or squash
2 medium granny smith apples
1/2 cup raisins
1/2 cup cranberries
1/2 cup brown sugar
1 tsp cinnamon
2 TB butter
1/2 cup chopped walnuts or pecans

Wash, dry and cut off the top. Scoop out seeds and stirngs. Combine all ingredients and mix well. Pour into pumpkin. Dot with butter and put the top back on. Bake at 350 for 75-90 minutes. Allow to cool before serving. Can be served as a dessert too with whipped cream or ice cream

Li'l Smokies or meatballs

4 lbs of li'l smokies
1 cup dijon mustard (prefer grey poupon)
1 cup red currant jelly
1/4 cup katsup
3/4 cup brown sugar

Heat on high in crockpot for 2 hours.

Another simple way to make this sweet appetizer is to use Meatballs with 1 cup of grape jelly and 1 cup of honey barbacue sauce.

Pumpkin Pies

Everyone has there favorite pumpkin pie recipie. This is one I make when I am in a hurry.

1 Ready graham cracker crust
15 oz pumpkin
14 oz sweetend and condensed milk
2 eggs
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt

Preheat oven to 425
Beat together ingredients and pour into pie crust. Bake 15 minutes, then reduce temp to 350 and bake another 35-40 minutes

Streusel Topped creamy pumpkin pie (recipe from Keebler ready crust)
1 ready crust

1 1/4 cups cold milk
1 cup canned pumpkin
2 packages cheesecake pudding mix
1 tsp pumpkin pie spice
8 oz whipped topping

1/2 cup chopped pecans or walnuts
2 TB brown sugar
1 TB butter

Stir milk and pumpkin in a large bowl until smooth. Add pudding mix and spice. Gently fold in 1/2 pf the whipped topping. Spoon into crust and refrigerate for 4 hours.

Mix nuts, sugar and butter in a small bow. and microwave for 2 1/2 minutes or until bubbly. Cool and sprinkle over pie just before serving.

Fluffy Pumpkin Cheesecake (recipie from keebler ready crust)
1 ready crust

1 package cream cheese softened
1/2 cup sugar
1 1/2 tsp pumpkin pie spice
1 cup pumpkin
2 eggs

Miz all ingredients and bake at 350 for 40 minutes

Mississippi Mud Pie

Step 1:
1/4 lb softened butter
1 cup fine chopped pecans
1 cup flour
press into 9x13 pan bake at 350 for 20 minutes (or until golden brown)

Step 2:
1 cup powdered sugar
2 blocks of cream cheese (room temp)
1 cup cool whip
1 tsp vanilla
Whip ingredients together and pour over cooled crust

Step 3:
2 small boxes of Chocolate instant pudding
1 tsp vanilla
3 cups milk
Whip together and pour over cheese mixture.

Top with cool whip and sprinkle on pecans and chocolate curls. Best when made a day ahead.

Southern Pecan pie

4 eggs
1 1/4 cup dark corn syrup
1 cup sugar
1 1/2 cup pecan pieces
4 Tb butter
1 tsp vanilla.

Boil sugar and corn syrup together for 2-3 minutes. Beat eggs until they form soft peaks. Pour hot syrup in slowly, while stirring. Add butter and vanilla. Pour pecans into a pie shell. Pour syrup over the top. Bake at 375 for 45 minutes or until set.

Flaky bacon squares

1 package bacon, cooked, drained and crumbled
1 can of Crescent roll dough
1/2 cup sour cream
1/2 cup cream cheese
1-2 TB horseradish
1 cup green onion, chopped and divided
1/8 tsp salt
1/8 tsp pepper
1 medium tomatoe, seeded and diced

Separate dough into rectangles. press into a single layer on a baking sheet. Bake at 375 for 14-17 minutes. Cool completely. Combine sour cream, cream cheese horseradish, 1/2 cup green onions salt and pepper. Spread over crust and top with bacon tomatoe and remaining onion.

Bran Pumpkin muffins

1 1/2 cup flour
1/2 cup sugar
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
2 cups Bran flakes
1 cup pumpkin
1/3 cup milk
2 eggs
1/2 cup raisins

Preheat oven to 400. Combine together all dry ingredients except for the bran flakes and raisins. Combine all wet ingredients and slowly add dry ingredients until well mixed. Add bran flakes and raisins until just mixed. Spoon into muffin tins and bake for 20 mintues.

Spiked pumpking soup

1 chopped onion
1/2 tsp minced and peeled fresh ginger
1/2 tsp cumin
2 garlic cloves
1 1/2 cups apple cider
1/3 cup bourbon
1/4 cup maple syrup
29 oz pumpkin
14 oz chicken broth
2 cups milk
1 tsp flour
1/2 tsp salt
1/4 tsp black pepper
9 TB sour cream
3 TB fresh parsley

Saute Onion, ginger, cumin and garlic cloves for 5 minutes. Stir in cider, bourbon, syrup, pumpkin, and broth. Simmer 10 minutes. In patches, place mixture in a blender and process until smooth, then return to the pan. Stir in milk, flour, salt and pepper. Heat through but do not boil. Serve with sour cream. (serving size about 1 cup.

Pumpkin Bread

1 cup sugar
1/2 cup brown sugar
1 cup pumpkin
1/2 cup oil
2 eggs
1/4 cup water
2 cups sifted flour
1 tsp soda
1/2 cup chopped nuts
1/2 tsp salt
1 tsp pumpkin pie spice

Combine sugar, pumpkin, oil and eggs. Beat until well blended
Sift together flour, soda, andspices. Add and mix well. Stir in nuts. Spoon into pan and bake at 350 for 65-75 minutes


5 ripe avacados
6 TB chopped fresh cilantro
1 medium red onion, diced
4 jalapeno chiles, stemmed, seeded and diced (optional)
3 TB fresh lime juice
1 1/2 tsp salt
1/2 tsp black pepper
Diced tomatoe (optional)

White sauce and cheese sauce

1 diced onion
3 TB unsalted butter
2 TB ap flour
1 chicken boullion cube
3/4 boiling water
1/4 cup shredded sharp cheese
1/4 tsp tarragon
1/4 cup cream

Dissolve boullion in hot water and set aside. Saute onions in butter until they become clear. Blend in flour. Add boullion, tarragon, cand cheese. Stir constantly until mixture thickens and bubbles. Remove from heat ans stir in cream. Salt and pepper to taste

Cheese sauce
2 TB butter
1 cup milk
2 1/2 TB flour
3 slices American cheese
Salt and pepper to taste

Melt butter in saucepan and blend in flour. Add milk and other ingredients. Cook over medium heat until smooth and thick.

Cleaning countertops

As I have been cleaning out cabinets and countertops of clutter, I have discovered wrappers that have recipies I wanted to save so here are a few. There will be more, trust me!

Quick cook whole cranberry sauce
12 oz fresh cranberries
1 cup of sugar
1 cup cold water
Boil rapidly until berries pop open (about 5 minutes) then cool and serve

Cranberry orange relish
12 oz fresh cranberries
1 medium orange
3/4 cup sugar

Blend in a food processor. Refrigerate before serving

Cranberry nut bread
2 cups all purpose flour
1 cup sugar
1 1/2 tsp baking powder
1 tsp salt
3/4 cup orange juice
1 TB grated orange peel
2 TB shortening
1 egg, well beaten
1 1/2 cup fresh chopped cranberries
1/2 cup nuts

Preheat oven to 350.
Mix dry ingredients. Stir in orange juice, orange peel, shortening and egg.
Mix until well blended. Add fruit and nuts. Pour into loaf pan and bake for 55 minutes.
