Chicken and Rice soup

8 cups of water
1 1/2 cups of diced celery
1 cup thin sliced or shredded carrots
4 cups of cubed cooked chicken
1 package of chicken flavored rice-a-roni mix
4 boullion cubes or 4 tsp of chicken boullion granules.

Combine water, celery and carrots and bring to a boil. Add chicken, rice mix and boullion and return to a boil. Turn heat down and simmer for 20 minutes.

Butterscotch Dip

8 oz cream cheese
1/4 cup butterscotch ice cream topping
1 TB brown sugar
1 tsp vanilla

Whip together until smooth, chill and then serve with fresh fruit.
