Sunshine cookies

ORIGINAL RECIPE

1 cup shortening
1 cup brown sugar
1 cup sugar
2 eggs
1 cup flour
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1/2 cup wheat germ
1 1/2 cups powdered milk
1 TB grated orange peel
2 TB orange juice
1 1/2 cups rolled oats
1 cup coconut

In a large bowl combine flour, salt, baking powder, baking soda, wheat germ, powdered milk, rolled oats, coconut.
In a mixing bowl, cream the shortening and sugar together, then add in the eggs, orange juice and orange peel. Slowly add in the combined flour and oat mixture.

Bake cookies at 375 for 8-10 minutes. They should look a little bit under cooked. Do not overcook because they will be so crunchy that they will crumble as you try to take them off the pan!

When I make this recipe, I tend to adapt it a little by cutting both sugars by 1/4 cup. I usually use half butter and half shortening. I like to grate the zest off a fresh orange for best flavor. But then I juice those oranges for fresh juice, too. And then to top the whole thing off, I added 1/2 a cup of ground flax seed to the recipe as part of the dry mixture.

When I make this recipe, I usually do a double batch so I can throw some in the freezer. A single batch should make at least 6 dozen. I hope everyone enjoys them!! Please let me know how your first adventure making them goes!
