Porketta Roast

4 lbs boneless pork roast
2 Tb olive oil
2 TB fennel seed
1 TB crushed garlic
1 TB coarse ground pepper
1 TB dill seed
1 tsp oregano
1 tsp oregano
1 tsp rosemary
1 tsp salt

Rub roast with oil. Mix remaining ingredients and rub on roast. Put roast into a roasting pan and add a little water for occasional basting. Add potatoes and carrots to roast in pan as well. (or put in a crock pot with water) Roast at 350 for 1 hour 15 minutes or in crock pot on low for 6 hours.
