Caribbean Chicken.

Carribiean Chicken

1 x large Pineapple
 1 med red and green bell pepper
 4 chicken breasts
 6oz brown sugar
 6oz clear honey
 2tsp cornflour (dissolved)
 4oz Tom puree
 1tsp fresh tyme
 salt/pepper
 1tsp Paprika

Sprinkle chicken with salt/pepper and oil. Roast in oven for 30-35mins @ 180c, 350f, gas 4.
 Cut pineapple into 4 and core. Cut flesh into cubes.
 Mix sugar, honey, tom puree, thyme and paprika into pint of water, add juice from chicken and boil.
 Add peppers & pineapple cubes. Simmer for 8-10mins. Add cornflour mix, cook for a further 3-4 mins until thickend
 Add chicken breasts and cook for 4-5 mins. In the meantime put pineapple shells under grill for 4-5 mins and serve chicken ontop of the shells on a bed of plain white rice!
